Our Roots Run Deep in Bellingham
At Bellingham Cider Company, we’ve built more than a restaurant — we’ve built a space where community, creativity, and comfort come together. From the moment you walk in, you’ll know you’re somewhere local. It’s the kind of place where neighbors bring their families, where first impressions become traditions, and where our story quietly weaves into the experience.
What might surprise you is that we’re not veteran restaurateurs. We're fire service professionals who began dreaming up this place in the back of an ambulance more than ten years ago. Our founders — Josh Serface and Bryce Hamilton — are blue-collar guys with a vision: to create something rooted in trust, leadership, and a deep commitment to Bellingham.
We didn’t set out to chase wealth. We set out to build something meaningful — a place that prioritizes people over profit. We’ve both spent years serving our community as first responders, union negotiators, and neighbors. That experience shaped our leadership style: empower good people, trust their expertise, and support them fully. That philosophy is at the heart of how we run this business.
Our vast team — from head chef Kyle Radulski, who leads the kitchen, to cider-maker Bailey Polson — is a family. Every team member plays a vital role in creating the experience that keeps our guests coming back. We take care of them, and they take care of you.
We're proud to be Whatcom County’s only cidery with a full-service restaurant, full bar, and patio seating. Our tagline, “Fiercely Local,” shows up on every plate and pour — from the farms we source from to the values we stand by. We work closely with Bellingham Pasta Co, Taylor Shellfish, Samish Bay Cheese, Avenue Breads, and other local purveyors to bring freshness and heart to every dish. And yes — our burgers are local from bun to bun, but you’ll also find some unexpected vegan and seasonal delights.
We’re growing thoughtfully. We’re building a new kitchen expansion with a wood-fired oven to serve authentic Italian-inspired pizzas and baked dishes. And we’re proud to power the restaurant entirely by solar energy — a reflection of our values and commitment to sustainability.
Our story began here in Bellingham — not Everett, not Seattle. Just here. And here is where we plan to stay.
